I have spent most of my working life in hospitality. In the mid sixties I started out with Trust House Forte as a Commis de Brasseur and then a Chef de Rang.

I then spent the next two years at catering college before, almost on a whim, joining the merchant navy and serving as a First Class Waiter on a P&O cruise ship. When I finally made it back to England, I found work waiting at The Hilton, Park Lane, in the International restaurant where I learned to master “ The Lamp” and it was then, I think, that I fell in love with the theatre of the dining experience.

I have always loved cheese but this turned into a kind of obsession after my first visit to the Paris Cheese Market in Rungis in the early nineties.

Later, I became a wholesaler until I passed the business on in 2005 – now, in addition to Thompson and Waterman, I manage and own, along with my wife Trish, a small yet busy bistro and deli in Sudbury, Suffolk. Lunch would not be complete without cheese!

The idea for building our bespoke, hand crafted Cheese Trolleys came following a fortuitous lunch at the famous Hotel School in Lausanne, Switzerland when a cheese trolley arrived at the table. I had never seen its like before. It was a thing of beauty and it made the cheese seem irresistible.

I no longer have any doubt that a beautifully crafted cheese trolley not only adds to the diner’s appreciation and enjoyment of the dining experience but it can also lead to significantly increased sales.

I went to see Alan Waterman at his workshop. Alan is a qualified precision engineer – nearly forty years of training and experience have given him the skills to construct our unique trolleys.We talked, we researched, we developed ideas and finally we produced the first Thompson and Waterman Cheese Trolley, entirely bespoke and constructed out of solid Oak & Sapele.
